Cold-smoked Black ham (“Juodasis kumpis”)

Biovela’s cold-smoked ham “Juodasis” is exclusive not only in the Baltic States, but also in the whole Eastern and central Europe regions. The product is a masterpiece of gastronomy awarded with gold medals from the Lithuanian Product of the Year 2010 contest and from the international trade fair Prodexpo 2011 in Moscow.

 

  • Made from the ham of pedigree pigs bred in Lithuania. To obtain an intensive colour, a pleasing smoke flavour and an exquisite, yet not bitter, taste, we use contemporary high-temperature vapour smoke generators.

  • Natural shavings from non-coniferous wood are treated with overheated water vapour at 500 ºC. The vapour washes resin, soot and volatile organic compounds from wood particles. This is how products are protected from carcinogenic substances, which form when meat is treated with the unrefined smoke of regular combustion.

  • In a combined technological process the ham is smoked and dried interchangeably. This multiplex process takes 3 months. The meat loses about 40% moisture, which at the same time increases the protein content and improves the nutritional and energy value of the product. Salting includes traditional spices like pepper, garlic and bay leaves.
